Farm Fresh Handling Instructions Fresh farm eggs have what is called a bloom or cuticle. This is a natural protective coating over the shell that helps seal out oxygen and bacteria.

For longest-lasting eggs:

* Do not wash eggs until ready to use

* Rinse gently with warm water only

* Refrigerate after washing

Approximate Freshness:

* Unwashed refrigerated eggs: up to 3 months

* Washed refrigerated eggs: about 2 months
